This Sweet Italian is a staple of my group's sausage repertoire. We do about 100# of pork a year in this and it always comes out great.
We have a lot of ground venison each year. We have a butcher turn a lot of it into breakfast link sausages, but they don't last very long and the prices keep climbing. So, this seasoning came in very handy. I just thaw out my ground venison and toss a bit of this seasoning in, mix it and throw it back into the freezer. Later, I take it out, thaw it and make little patties for our breakfast. It's just so delicious! Even our 4 year old little man really enjoys his venison sausage every morning-- yes EVERY morning, with his breakfast of cereal, hashbrown and fruit. Since we're big on breakfast and eat a lot of sausage, this seasoning in the answer for us! Inexpensive and really delicious-- I'm very happy I can have access to what the pros at the butcher shop use. Besides butchering my own deer, now I can make the sausage, too!
