1st time using this kit. Did 80/20 venison/pork belly. Started off in the smoker then finished in the oven. Great flavor and would highly recommend this kit.
Kit was very well packed & sealed. Good directions. For me, having previously tasted the spices, I thought it tasted more like ring bologna. I added mustard seed and pepper, & smoked it for 6 hours in my smoke house and finished it in my oven per the instructions. Comments from many friends were: it was the best tasting venison bologna we ever had. I’ll rename it Stick Bologna. Thanks guys, It is the best!

Had one case blow out the seam thought it was from holding to tight then looked and it was a clean break from the seam with hardly any pressure other than that loved the kit and will order again
Have used this for 12 years and always have great tasting summer sausage.
One of my favorite kits from CY...for processing my deer. I prefer the summer sausage over the bologna by far. Kit is perfect for DIY-ers, and the instructions are very easy to follow. Hats off to CY for creating these kits. Will be a go to kit year after year for me.
