I've been making this for yrs. The best complement comes from an 82 yr. old German friend when she said it's the best tasting bologna she has had since living in Germany. Friends and family LOVE IT! I canÕt make enough to go around.
Ordered 2 batches and made 20 lbs of bologna. I added cheese and jalapeno for an additional kick. Very easy to make and turns out great! Would highly recommend!

The flavor for the bologna was excellent. It is very peppery, so if you don't care for spicy bologna, I'd look for something more mild. The casings that come with it are really big, summer sausage size. You wouldn't be able to bend it and make a ring. I'd buy 40mm casings or so if you want to make "ring" bologna.
used five pounds deer meet and five pounds 80-20 ground chuck made the best bologna we ever had .now were trying the summer sausage !!
