We got this kit last year and took the advice of a friend of ours and added spices to the 10lb of meat the kit does. I still wouldn't consider it to be hot by far. Smells like it is when you mix it up, but I suggest frying some before u make your final decision. This time we mixed 3 packs seasoning (instead of 2pks) with 20lbs of meat. Now, it's "hot" sausage!!! It's darn good with a ton of flavor, and a kick to boot!!!
I purcashed the seasoning mix, and it is great. I added a little sage, and it made the perfect breakfast sausage. I highly recommend.
