    I made this the first time with the kit and was a huge hit! So then decided to just get enough to make a 25lb batch. The kit came with 1oz of curing salt for 10lbs. I figured for 25lbs I’d use 2.5oz. Came out very salty. I think next time I’ll cut the curing salt in half.

    Tremendous base spice for those who want the traditional bologna flavor without the heat. Especially good when used as a base and high temp swiss or cheddar cheese is mixed in our venison/pork bologna.

    Used this seasoning a few times with a venison / pork mixture. I also added some high temperature cheddar cheese to it. Very popular with my friends, and family. The kids also devour it.
