Bologna, Dutch Country Sweet

Use one package per 25 pounds of meat. This is a sweet bologna seasoning in the tradition of Pennsylvania's south central counties. Ingredients: Sugar, Salt, Spices, Natural Maple Flavoring, Monosodium Glutamate, Dehydrated Garlic, may contain up to 2% silicon dioxide to prevent caking.Please note: This product requires the use of a curing agent like our Tinted Cure #813 found in the Venison Seasonings section.     Very tasty and sweet!

    I bought this mix to make some venison bologna. I enjoy sweet lebonon bologna so I decided to try this. I followed the smoking schedule that is printed in Conyeager's book and everything turned out perfect. Some reviews I have read say that this mix isn't sweet, but I have no idea why they would say that because it definately is. Very good!

    This is not a bad seasoning, but it is not as sweet as the bologna I had growing up in York PA. It is a good start, but you need to add a lot of brown sugar and molasses to get the sweetness of south central PA bologna.

    Those looking for a bologna recipe that closely resembles the PA sweet Lebanon types will appreciate this. I have stopped using my own recipe and go with this now. Year after year it is a family favorite.

    I have tried many different formulations in an effort to get what I would call a sweet bologna, much like the recipes in southern PA that are so very delicious. My first batch went over very well with family and friends. My next will include adding some fresh cracked black pepper. This blend is one I will come back to time and time again.

    Excellent product. I added liquid smoke and more dark brown sugar to get the sweetness we were looking for.

    sweet bolongna

    Made up some bolongna from fresh ground pork. I made patties and grilled them. Rave reveiws from everybody at the party. This was the bolongna I remember from small local butchers when I was a kid.
