Tried this seasoning mixed in with my muscle jerky marinade just for a small test and sh!ts and giggles. Patted meat after about a 12 hour soak and sprinkled a light dusting of snack stick seasoning on the outside of the meat as well. My pound and a half “experiment” lasted all of about a day and a half! Everyone, even kids who claim cardboard boxes are too spicy tore through jerky like there was no tomorrow. It has good enough flavor, I don’t miss the heat much. Got hot stick seasoning for that anyway!
Since I wasn't using a full 25 lbs, I had to figure out the portion for 10 pounds which wasn't difficult. However, not being a person who likes real spicy, these had a little more of a peppery finish then I cared for. That could have also come from using too much seasoning per pound. I'll probably go a bit lighter on the seasoning on the next batch and see if there's a difference. Still had nice flavor though.
I have had lots of different snack sticks ,but these was the best I have ever had!!!
Best Snack sticks. I have been using this spice mix for over 15 years. Great flavor. I make mine with 100% deer meat.Dont forget to get 813 cure salt. I stuff them into 21MM colligen casings cut to just under my smoker racks and smoke.when done cut to size that fit quart zip bag and put them in freezer. So you dont eat them all at one time.
