This is the best bologna I have ever made or bought. And I have been making it for about 5 years. It is a little spicy compared to traditional pa deer bologna I am used to from the butchers which is what I was going for. But it is still fantastic, I added 1 cup of brown sugar, which is good enough but I may add an additional one or a at least ½ cup more next time, I also thought about adding some molasses. I am going to make another batch next week with high temp cheddar in it. I will buy a lot more of this in the future. I would like to try the Dutch country sweet but am low on ground deer meat and worried it won’t turn out as good as this one. I smoked it for 9 hours over hickory chips. The smoke was strong but not overpowering by any means. It had an identical appearance and firmer texture to what you would expect from the butcher. I have had deer bologna from butchers that was very good but very easy to get sick of, not this stuff. The only problem I had if you can call it a problem was that I only ended up with three full size bologna but had 4 casings for 10 lbs. I guess I packed it too tight to make 4 but I everyone including myself thought the consistency was great. I don’t eat a whole lot of bologna throughout the year really only when I shoot a deer. But this kit was so fantastic I have been strongly considering buying beef and making more when I run out of deer.

Found this mix in a butcher shop/Post office in clarion county 15 years ago, been useing since. Works well with deer or beef.

I have tried Bologna seasonings from many places over the years and this is truely the best one.
